Submitted on: October 14, 2009 Subject: preparing for the apocalypse Question: Dr. Cinque, I think everyone would agree that we live in uncertain times. I am no expert on economics or anything like that, but I do have enough sense to know that in light of the economic crisis in our country, along with other factors, our "way of life" we Americans have known for a long time may change drastically, and soon! I would like to start preparing my home for this by storing up some food and water supplies, and starting a garden. Can you recommend what foods would be the healthiest to preserve/store? I would appreciate any tips! Dr. Cinque's Answer: Larua, I agree that the peril our country faces is much worse than what the government and media let on. Of course, it's possible that things will stumble along the way they have been for years. But it's also possible that there could be a sudden breakdown, and I suspect it would be precipitated by a collapse of the dollar. But to answer your question, I would say that the most important vegetables to grow would be leafy greens of all kinds. And they would not be for storage, but for fresh eating. As for preserving and storing food, I would think that having non-perishable dry goods like sacks of beans and brown rice would be good. Having a plentiful supply of raw nuts would be good, but they should be stored in the refrigerator and/or freezer. As for fruits, I favor drying them, and I have a food dryer. And for vegetables like string beans, broccoli, etc. I favor freezing to canning. But, these aren't iron-clad rules; they are just my preferences. But, I do think it's high-time to start taking some steps in this direction. |
